- 2 tsp Dry Yeast
- 1 tsp Inulin
- 2 tbsp Warm Water
- 7.5 oz Almond Flour
- 1 tbsp Psyllium Husk Powder
- 1 tsp Baking Powder
- 1/2 tsp Xanthan Gum
- 1 pinch Salt
- 4.5 oz Unsalted Butter melted
- 7 large Eggs
Instructions
- Preheat your oven to 170C/340F.
- In a small mixing bowl, add the yeast and inulin, followed by the warm water. Mix well and leave to proof in a warm place for 10 minutes.
- In a large mixing bowl, add the almond flour, psyllium, baking powder, xanthan gum, and salt. Mix well.
- Add the melted butter and eggs and mix well.
- Add the proofed yeast and mix well.
- Once the mixture is combined, pour into a 9x5in loaf pan that has been lined with parchment paper.
- Leave your batter to prove for 20 minutes in a warm spot, covered with a tea towel.
- Bake in the oven for 30-40 minutes, the bread is cooked when golden brown and makes a hollow sound when tapped.
- Remove from the tin and leave to cool on a rack.

can I remove inulin?
Hi Anne, the yeast will not rise without inulin.
The yeast should rise. The inulin is to test if the yeast is still alive.
Mine turned out perfectly well; I baked it in my toaster oven at 350 degrees (it doesn’t go to 340) for 20 minutes, then turned it down to 325 for 5 minutes, and it looks just like the picture. Thank you!
I tried this two times. Love the taste and texture. My problem was after I take this beautiful bread out of the oven it falls flat. Do you have any suggestions?

It sounds like your bread might need just a touch more baking time – try another 5-8 minutes and see how it goes.
Bread came out yellow, not like in the pic, and tastes like an omelet.

It sounds like you are using some very good, farm-fresh eggs! Both the yellow colour and strong egg flavour comes from the types of eggs you’ve used, the brighter the colour, and the stronger the flavour make me think you might be using eggs from some happy chickens in your own backyard.
Could you use this recipe to make dinner rolls out of it?

Sure, but you will need to bake them in a muffin pan as the dough is quite wet.
This bread is great! My son is a diabetic and my husband and I have been eating keto for a couple months. The texture and taste are very good. Iโve always been a bread baker ( non keto) and itโs nice to find something we like.
