  1. Place a nonstick frying pan over high heat.
  2. Add the oil and half of the diced red onion, saute for 1 minute.
  3. Add the browned beef and saute for another minute before adding the taco seasoning and mix well.
  4. Saute for another minute before adding the enchilada sauce. Add salt and pepper to taste and mix well.
  5. Remove from the heat and set aside.
  6. Preheat your broiler/grill to high or around 200c/390F.
  7. Spray a sheet pan with olive oil and evenly spread out your pork rinds.
  8. Gently spoon over the ground beef mixture and sprinkle over the cheese.
  9. Broil/Grill until the cheese is melted and bubbling – about 5-8 minutes.
  10. Sprinkle over the remaining diced onion, along with the black olives, tomato, scallions, and sour cream. To make fancy stripes with your sour cream, add it to a sandwich bag, snip off the corner and pipe it over your nachos.
  11. Serve immediately.
