This Stuffed Peppers recipe is filled with our delicious cajun ground beef and topped with melted cheese.

Peppers can be stuffed with just about anything, but this spiced cajun ground beef version is one of our favorites.
This lstuffed peppers recipe makes 6 serves. 1 serving is 1 stuffed pepper (just 6g net carbs) – but if you’re hungry, you can always eat more!
Stuffed Peppers Ingredients

- 1 tablespoon of Olive Oil
- 1 small Onion, diced
- 2 cloves of Garlic, crushed
- 1 pound of Ground Beef
- 2 tablespoons of Cajun Spice
- 1 teaspoon of Salt
- ½ teaspoon of Pepper, ground
- ½ cup of Tomato Passata
- 1 cup of Cauliflower Rice
- 6 medium-sized Peppers (Capsicums)
- 1 cup of Cheddar Cheese, shredded
How to Make Stuffed Peppers

- Preheat your oven to 200C/390F.
- Place a large saucepan over high heat and add the oil, onion, and garlic. Saute until the onion starts to turn translucent.
- Add the ground beef and saute until browned, then add the cajun spice, salt, pepper, and tomato passata. Mix well.
- Lower the heat and simmer the mixture for 5 minutes.
- Remove the pan from the heat, stir through the cauliflower rice, and set aside.
- Prepare the peppers by slicing off the tops and removing the seeds and white pith from the inside. Sit them in a baking dish with the cut sides facing up.
- Evenly spoons the ground beef mixture between the peppers and top with cheddar cheese.
- Bake in the oven for 15-20 minutes until the cheese has browned and the peppers are soft.
- Serve immediately.
