  • 1.5 pounds of Cauliflower
  • 6 slices of Bacon
  • ⅓ cup of Scallions, thinly sliced
  • ¾ cup of Low Carb Mayonnaise
  • 2 tablespoons of Wholegrain Mustard
  • ½ teaspoon of Salt
  • ½ teaspoon of Pepper, ground

How to make Keto Cauliflower “Potato” Salad
  1. Cut the cauliflower in bite-sized pieces.
  2. Place a large saucepan of water over high heat and bring to the boil.
  3. Add the cauliflower and cook for 4-7 minutes, until just tender, then drain well. Place in the fridge to cool.
  4. While the cauliflower is cooling, saute the bacon in a large frying pan over high heat. Cook until crispy, cool, then chop or crumble.
  5. Add the mayonnaise, mustard, salt and pepper to a small bowl and whisk together. Set aside.
  6. In a large mixing bowl, add the cooled cauliflower, bacon, scallions, and pour over the dressing. Mix well.
  7. Chill for 30 minutes before enjoying to help the flavors blend together.
