- Don’t overcook the broccoli. Boil the florets until just al dente — they’ll continue cooking in the oven. Overcooked broccoli turns mushy and releases excess water into the sauce. 3–4 minutes in boiling water is enough.
- Drain the broccoli thoroughly. Excess water is the main cause of a watery casserole. After boiling, drain well and give the florets a gentle shake in the colander before adding to the mixing bowl.
- Add a crunchy keto topping. - Preheat your oven to 200C/390F.
- Place a saucepan of water over high heat and boil the broccoli florets until al dente. Drain well and add to a large mixing bowl along with the shredded chicken.
- Add the cream cheese, cream, almond milk, mustard, garlic, salt, and pepper in a small saucepan, and place over low heat. Whisk until the sauce is smooth.
- Pour the warm sauce into the broccoli and chicken mixture, add the basil, and mix well.

I will certainly do this recipe today, but wonder where you buy healthy rotisserie chicken these days. The ones that I find at Costco, Food Lion, WalMart have lousy ingredients such as sugar, dextrose, potato starch, carrageenan, soy, etc injected into the chicken. The recipe looks like one I want to try. I do not trust rotisserie chicken from any store in 2025, but probably would have done so in 2022. Thank you for putting the weight of the shredded chicken in the instructions. I will use grass fed/finished chicken frim my own kitchen. There is no telling what stores are injecting into those rotisserie birds.

Made this just as written except only 1/2 because theres just 2 of us. It was delicious with a fresh green salad. The leftovers I decided to make into soup next day by adding some frozen riced cauliflower , 2.5 tsp curry powder and 2c of chicken stock and pureeing (took out a little for texture and added back in at end) delicious for lunch.
