This Low Carb Baked Almonds recipe makes deliciously salty, crunchy almonds, with a light smokey flavor. They are the perfect low carb snack! Homemade roasted almonds are easy to make, and much cheaper than buying roasted and flavored almonds at the store.
  • 4 ½ cups of Almonds, raw
  • 5 teaspoons of Salt
  • 1 teaspoon of Liquid Smoke
  • 5 teaspoons of Boiling Water
  • 2 tablespoons of Avocado Oil
  • Extra Finely Ground Salt, for dusting

  1. Preheat your oven to 175C/350F. Line a large baking sheet with parchment paper and set aside.
  2. In a small bowl mix together the salt, liquid smoke, and boiling water. Stir until as much of the salt is dissolved as possible.
  3. Add the almonds to a large bowl and pour over the salt mixture. Mix well to ensure all the nuts are coated. Leave to sit for 2 minutes.
  4. Pour the almonds onto your prepared tray and spread out into an even layer.
  5. Bake your almonds for around 15-20 minutes total. Give them a stir after about 8 minutes, and another stir every 5 minutes until nicely roasted. The check doneness, remove a nut and cut in half, the center should be a very light brown.
  6. Remove the nuts from the oven and pour into a heatproof bowl. Drizzle over the avocado oil, and sprinkle with a couple of pinches of fine salt. Stir well to ensure all the nuts are coated.
  7. Leave to cool completely, the almonds will soak up the oil as they cool.
  8. Once cool, enjoy as a snack, or store in an airtight container!
