This delicious Mexican inspired keto nachos recipe is made with pork rinds instead of corn chips. They are quick and easy to make with just 2g net carbs, and super tasty.

This Keto Nachos recipe is the first of eight quick and easy recipes in our budget-friendly ground beef series, where we are turning 4lb/1.8kg of meat into eight recipes.

It starts with our Keto Basic Ground Beef – an easy recipe to brown and store your beef.

This keto nachos recipe makes four servings. One serving is a quarter of the nachos with 3g net carbs.

  • 1 tablespoon of Olive Oil
  • ½ Red Onion, diced
  • 8 ounces of Basic Ground Beef
  • 2 teaspoons of Taco Seasoning
  • ⅓ cup of Keto Enchilada Sauce
  • Salt, to taste
  • Pepper, to taste
  • 3 ounces of Pork Rinds
  • ½ cup of Cheddar Cheese, shredded
  • ¼ cup of Black Olives, sliced
  • 4 tablespoons of Tomato, diced
  • 1 Scallion, sliced
  • ¼ cup of Sour Cream

  1. Place a nonstick frying pan over high heat.
  2. Add the oil and half of the diced red onion, and saute for 1 minute.
  3. Add the beef and saute for another minute before adding the taco seasoning and mixing well.
  4. Saute for another minute before adding the enchilada sauce. Add salt and pepper to taste and mix well.
  5. Remove from the heat and set aside.
  6. Preheat your broiler/grill to high or around 200c/390F.
  7. Spray a sheet pan with olive oil and evenly spread your pork rinds.
  8. Gently spoon over the ground beef mixture and sprinkle over the cheese.
  9. Broil/Grill until the cheese is melted and bubbling – about 5-8 minutes.
  10. Sprinkle over the remaining diced onion and the black olives, tomato, scallions, and sour cream. To make stripes with your sour cream, add it to a sandwich bag, snip off the corner, and pipe it over your nachos.
  11. Serve immediately.

  • Sprinkle over the remaining diced onion, along with the ¼ cup Black Olives, 4 tablespoons Tomato, and 1 Scallion. To make fancy stripes with your ¼ cup Sour Cream, add it to a sandwich bag, snip off the corner and pipe it over your nachos.
