  • 1 pound of Cauliflower, cut into florets
  • 10 ounces of Fresh Fennel, sliced
  • 2 cloves of Garlic, quartered
  • 1 teaspoon of Salt
  • ½ teaspoon of White Pepper, ground
  • 2 cups of Water
  • 2 cups of Chicken Stock, or bone broth
  • ½ cup of Heavy Cream

How to make Keto Pork and Fennel Soup
  1. Place all ingredients, except the cream, into your slow cooker.
  2. Cook on high for 6 hours.
  3. Remove the pork from the soup and shred. Set aside.
  4. Blend the soup with an immersion blender, until smooth.
  5. Stir through cream and shredded pork. Taste and add extra salt and pepper, if needed.
  6. Serve immediately.
