Ingredients for your Keto Cauliflower Colcannon:

  1. 1 pound of Cauliflower
  2. 5 ounces of Cabbage, finely shredded
  3. 2 ounces of Scallions, thinly sliced
  4. 2 tablespoons of Chives, finely chopped
  5. 2.5 ounces of Butter
  6. 1 teaspoon of Pepper
  7. 1 teaspoon of Salt

Instructions For Making Your Keto Cauliflower Colcannon:

  1. Cook the cauliflower in a pot of boiling water for 5 minutes, until it is tender. Drain well and blend in a food processor with the salt and pepper. A good quality food processor is a necessity for any kitchen, you can find the one we use here.
  2. Melt half of the butter in a frying pan over medium heat, add the cabbage and saute for 3 minutes.
  3. Add the scallions and chives and saute for 2 minutes. Reduce the heat to low.
  4. Pour the mashed cauliflower into the pan and mix well. Adjust seasoning.
  5. Serve Cauliflower Colcannon with the remaining butter melting over the top.

  • 1 lb Cauliflower
