  • 1 cup of Unsweetened Shaved Coconut
  • ⅔ cup of Coconut Flour
  • ⅓ cup of Golden Flax Meal
  • 1 teaspoon of Baking Powder
  • ½ cup of Sugar-Free Maple Syrup
  • 2 teaspoons of Vanilla Extract
  • 1 Lemon, zested
  • ⅔ cup of Coconut Cream
  • 1 cup of Unsweetened Almond Milk
  • 1 cup of Blueberries

How to make Keto Blueberry Baked Oatmeal
  1. Preheat your oven to 160C/320F.
  2. In a mixing bowl, add the shaved coconut, coconut flour, flax meal, and baking powder. Mix together.
  3. Add the remaining ingredients, except the blueberries and mix well.
  4. Gently fold through the blueberries and spoon the mixture into a greased casserole dish, and smooth out the top.
  5. Baked for 25-30 minutes until the top is just starting to brown.
  6. Remove from the oven and serve warm with extra Sugar-Free Maple Syrup.
