Frequently Asked Questions

Can I omit the psyllium husk powder?

Psyllium husk powder helps to bind the ingredients and create a more bread-like texture. While it can be omitted, the bread may be slightly more crumbly.

Can I use coconut flour instead of almond flour?

Yes, you can substitute coconut flour for almond flour. However, you may need to adjust the amount of liquid in the recipe as coconut flour absorbs more moisture.

Can I make quick bread in the oven?

While this recipe is designed for the microwave, you can bake it in the oven at 350°F (175°C) for 10-12 minutes.

  1. I don’t have psylium husk at hand. Can I substitute that or omit it? What does the psylium husk do in the recipe? Thanks!

  2. I have found you can substitute almost any fat for the butter. I’ve tried using sour cream, buttermilk, cream cheese, even mayonnaise, and they all work!

Just made a batch using Stonemill Kitchens Parmesan, Artichoke, and Jalapeno premium dip. Delicious!

I double the recipe and use two 4-1/2 inch high by 1-3/4 inch tall ceramic ramekins. If you fill these with one inch of the batter and microwave each for 3 minutes (separately), you will get two 4-1/2 inch “muffin tops.” Slicing these off make a perfect bun for hamburgers, egg sandwiches or whatever filling suits your fancy. The bottoms can be sliced thick or thin and make really good toast.

Tips: pulse the eggs and fat together in a blender before adding to the dry ingredients and whisk together to get a really smooth batter. After filling the ramekins, tap a few times on the counter to settle the batter before putting in the microwave.

Thanks for giving us this fabulous recipe!
