  • Cream Pie Chocolate Cookie Base ingredients:
  • 2.5 ounces (1/2 cup) of Almond Flour
  • 1 ounce (1/4 cup) of Cocoa Powder, unsweetened
  • 2 tablespoons of Erythritol, granulated
  • 2 ounces of Unsalted Butter, melted
  • Cream Pie Raspberry Pie Filling:
  • 0.3 ounce satchet of Sugar-Free Raspberry Jello
  • 1/4 cup Boiling Water
  • 8 ounces of Cream Cheese
  • 2/3 cup of Heavy Cream
  • 2 tablespoons of Erythritol, granulated
  • 1 teaspoon of Vanilla Essence
  • 3.5 ounces (1/2 cup) of Sugar-Free Dark Chocolate Chips
  • Cream Pie Topping Ingredients:
  • 1/2 cup of Heavy Cream

How To Make Keto Raspberry Cream Pie

How to make Keto Raspberry Cream Pie
  1. How to make the Chocolate Cookie Base
  2. Preheat your oven to 160C/320F.
  3. In a bowl mix the almond flour, cocoa powder, erythritol, and butter.
  4. Press the mixture into the base of a 9in pie dish.
  5. Bake for 12-15 minutes until firm around the edges and slightly puffed in the center. Set aside to cool.
  6. How to make the Raspberry Filling:
  7. Dissolve the jello crystals in the boiling water in a small bowl.
  8. Add the softened cream cheese, erythritol, vanilla, and heavy cream to a mixing bowl. Beat with a hand mixer until smooth.
  9. With your hand mixer on low speed and slowly pour the jello mixture into the cream cheese. Return the speed to medium and whip until fully combined.
  10. Fold the sugar-free chocolate chips through the jello mixture.
  11. Pour the mixture on top of the cooled chocolate crust and spread evenly. Set in the fridge for 30-60 minutes, or until set.
  12. Easy Cream Pie Topping:
  13. Once the filling has set, whip the cream to firm peaks.
  14. Spread over the pie and decorated with fresh raspberries, if desired.
  15. Cut into 12 slices and serve!

How to make the Chocolate Cookie Base
