Ingredients for Making Crunchy Broccoli

  • 1 large head of broccoli
  • 3 tablespoons of Olive Oil
  • 3 tablespoons of Parmesan Cheese, grated
  • Pinch of Salt
  • Pinch of Pepper
  • 1 tablespoon of butter

How To Make Crispy Broccoli

  1. Preheat oven to 200C/390F.
  2. Cut the broccoli into evenly sized florets and place into a mixing bowl.
  3. Add the oil, parmesan, salt and pepper and mix with your hands to ensure the broccoli is coated in the other ingredients. I recommend using food safe disposable gloves to keep your hands clean.
  4. Line a roasting tray with parchment paper and evenly spread the broccoli over the tray. Dab the butter over the broccoli.
  5. Roast in the oven for 25-30 minutes. For best result remove the broccoli after 10 minutes to mix through and turn. The broccoli is cooked when a knife is easily inserted into the thickest piece.
  6. Remove from the oven and serve.

This recipe was a hit with both my husband and my son (neither of them is a vegetable lover). I didn’t have gloves, so I put all ingredients in a plastic ziplock and tossed them together before dumping them on the baking tray. It worked well with no mess.
