Low Carb Broccoli and Bacon Croquettes

There are so many people who will avoid broccoli at all cost, but it doesn’t have to be the case. Our Low Carb Broccoli and Bacon Croquettes have been tested on broccoli haters – one of our taste testers couldn’t believe that Chef Gerri had based these on broccoli!

We’ve added nutritional information for your benefit on the recipe card below. This recipe makes 14 croquettes or 14 servings, the recipe card reflects 1 serving which is 1/14 of the total recipe.

Low Carb Broccoli and Bacon Croquettes

Ingredients for your Low Carb Broccoli and Bacon Croquettes:

  • 1 pound of Broccoli
  • 2 ounces of Butter
  • 3 slices of Bacon
  • 1/2 cup of Parmesan, grated
  • 1 Egg
  • 2 ounces of Pork Rinds, crushed into crumbs
  • 1 teaspoon of Salt
  • 2 teaspoons of Pepper
  • 1 tablespoon of Flaxseed Meal
  • 1 tablespoon of Almond Meal, or Almond Flour

Instructions for making Your Low Carb Broccoli and Bacon Croquettes:

  1. Boil or steam broccoli for 5 minutes, or until tender. Drain well.
  2. Using a stick blender, blend the warm broccoli with the butter into a puree. Place into a mixing bowl and stir through the grated parmesan, pepper and salt.
  3. Dice the bacon into small pieces and saute in a non-stick frying pan over a low to medium heat for 6 to 8 minutes. The bacon fat will render whilst the bacon browns, add the bacon and fat to the broccoli and mix well.
  4. Chill the broccoli and bacon mix for at least 30 minutes.
  5. Turn your deep fryer to 350F/180C and allow to heat up.
  6. After the mix has chilled, add the egg and ground up pork rinds and mix well.
  7. Roll the mixture into 14 small barrel shapes.
  8. On a plate mix together the almond meal and flaxseed meal, roll each croquette through this dry mix and ensure each side is coated, pressing the mixture onto the surface of the croquette.
  9. Deep fry your croquettes in batches, ensuring you don’t overcrowd the fryer. They will take around 3-5 minutes, remove when crisp and golden brown. Enjoy!
