Ingredients for Keto Mustard Pork Casserole

  • 4 ounces of Butter
  • 1 medium Onion, diced
  • 1 tablespoon of Thyme, fresh
  • ½ teaspoon of Salt
  • 2 pounds of Pork Shoulder, diced
  • 3 tablespoons of Whole Grain Mustard
  • 8 ounces of Chicken Stock
  • 11 ounces of Sour Cream
  • 14 ounces of Mushrooms, quartered
  • 3 tablespoons of Fresh Basil, finely sliced

For a little extra kick in your stew try adding a pinch of chili flakes to your pork casserole ingredients.

How To Make Keto Mustard Pork Casserole

  1. Place a large saucepan over medium heat and add the butter, onion, thyme and salt.
  2. Saute for 5 minutes, until the onion is beginning to turn translucent.
  3. Add the diced pork and cook for 5 minutes, until the pork has started to color.
  4. Add the seeded mustard, chicken stock, and sour cream and bring to a simmer.
  5. Simmer for 20 minutes before adding the mushrooms. Stir well.
  6. Continue to simmer for 40-60 minutes, until the pork is tender and the sauce has thickened.
  7. Remove from the heat, add the fresh basil and stir through.
  8. Serve and enjoy.
