  • 3 large Zucchini, spiralized
  • 3 cloves of Garlic, crushed
  • 1 Avocado, pitted
  • ⅓ cup of Cilantro, torn
  • ¼ cup of Olive Oil
  • 1 tablespoon of Lemon Juice
  • ½ teaspoon of Salt
  • ¼ teaspoon of Pepper, ground
  • Water, as needed
  • Cilantro, to serve

How to Make Keto Zoodles with Avocado Sauce

How to make Keto Zoodles with Avocado Sauce
  1. Place the spiralized zucchini on a tray lined with paper towel and set aside.
  2. In your food processor, add the avocado flesh, cilantro, half the oil, lemon juice, salt, and pepper. Blend to a smooth puree, add water until the sauce is of pouring consistency.
  3. Place a large nonstick frying pan over high heat and add the remaining oil and garlic. Add the zucchini noodles and saute for 2-3 minutes, until tender.
  4. Remove from the heat and pour over the avocado sauce.
  5. Gently toss together and serve sprinkled with extra cilantro, and parmesan cheese, if desired.
