  • 2 tablespoons of Erythritol
  • 2 tablespoons of Unsalted Butter
  • 1 large Egg

  • ½ cup of Unsweetened Almond Milk
  • ½ cup of Erythritol
  • 1 teaspoon of Vanilla Extract
  • 2 teaspoons of Xanthan Gum
  • ¼ cup of Unsalted Butter
  • Pinch of Cinnamon, ground
  • Pinch of Nutmeg, ground

How to make Keto Sugar Cream Pie
  1. Preheat your oven to 160C/320F.
  2. In a bowl, add the crust ingredients and mix well.
  3. Press the crust mixture into the base and up the sides of a shallow 9in pie plate.
  4. Bake for 10-12 minutes until set. Set aside to cool.
  5. Place the heavy cream, almond milk, erythritol, and vanilla into a saucepan over medium heat and bring to a simmer.
  6. Sprinkle over the xanthan gum and whisk until the mixture is thick and bubbling.
  7. Remove from the heat and stir through the butter.
  8. Pour the filling mixture into the cooked crust and smooth out. Sprinkle over the cinnamon and nutmeg.
  9. Bake the pie for 30-40 minutes until the filling is bubbling and lightly browned.
  10. Leave the pie to cool at room temperature for 30 minutes before placing in the fridge to cool completely.
  11. Cut your chilled pie into 12 slices and serve.
