  • 2 cups of Almond Flour
  • 1 Egg
  • 2 ounces of Butter, melted
  • 1 pinch of Salt
  • 1 pinch of Pepper, ground
  • Filling Ingredients:
  • 1 tablespoon of Olive Oil
  • 2 cloves Garlic, crushed
  • 10 ounces of Baby Spinach
  • 4 large Eggs
  • 1 cup of Heavy Cream
  • 1 teaspoon of Salt
  • ½ teaspoon of Pepper, ground
  • 4 ounces of Jarlsberg Cheese, shredded

How to make Keto Spinach Quiche
  1. Preheat oven to 170C/340F.
  2. Place all crust ingredients into a bowl and mix well.
  3. Press into the base and up the sides of your quiche dish.
  4. Bake for 12-15 minutes. The crust may puff up when cooking, it will settle back down as it cools. Set aside while preparing the filling.
  5. Place a large frying pan over high heat and add the oil.
  6. Saute the garlic and spinach with a pinch of salt for 5-8 minutes, until cooked through. Sit the cooked spinach in a colander over the sink or a bowl to drain any excess liquid, leave for 10 minutes.
  7. Spread the spinach evenly over the baked crust and sprinkle over the cheese.
  8. In a large bowl, add the eggs, cream, salt, and pepper. Mix well.
  9. Gently pour over the spinach.
  10. Bake for 25-35 minutes until the center doesn’t jiggle when moved.
  11. Cut into 10 slices and serve immediately.
