Keto Pico De Gallo is best served fresh but can be stored in the fridge for up to 3 days. It is not suitable for freezing.

  • 4 large Tomatoes
  • ½ Red Onion, finely diced
  • 1 clove of Garlic, finely chopped
  • 1-2 Red Chili’s, finely diced
  • 2 tablespoons of Cilantro, finely chopped
  • 1 Lime, juice only
  • ¼ cup of Olive Oil
  • ½ teaspoon of Sea Salt Flakes
  • Pinch of Pepper

  1. Cut the tomatoes into quarters and remove the seeded center. Dice the tomato flesh and place into a mixing bowl.
  2. Add the remaining ingredients and mix well.
  3. Serve straight away.
