This keto meatloaf is easy to make at home. It uses low-carb ingredients such as ground beef and almond flour, and it is gluten-free and paleo-friendly.

We like to serve our meatloaf with Buttery Cauliflower Mash.

This recipe makes five servings of keto meatloaf. One serving is approximately 200g/8oz.

Follow these simple steps for a moist and flavorful keto meatloaf:

  1. Preparation: Preheat your oven and line a loaf tin with baking paper.
  2. Saute: Cook finely diced onion and crushed garlic in beef tallow until translucent. Set aside to cool.
  3. Mix: Combine the sauteed onion mixture with all other ingredients in a large bowl.
  4. Form: Use your hands to mix thoroughly, and then press the mixture into the loaf tin evenly.
  5. Bake: Bake at 160C/320F for 50 minutes. Drain some juices, top with extra marinara sauce, and bake for an additional 10 minutes.
  6. Rest: Let it rest for 10 minutes before slicing.

Unit Conversion

Ingredients

  • 1 tablespoon tallow
  • 1 small onion finely chopped
  • 2 cloves garlic crushed
  • 2 pounds ground beef
  • 2 large eggs
  • 2 tablespoons oregano dried
  • 1 1/2 teaspoon salt
  • 1/4 teaspoon pepper ground
  • 1/3 cup low carb marinara sauce
  • 1/3 cup almond flour
  • 2 tablespoons low carb marinara sauce extra

Instructions

  • Preheat your oven to 160C/320F and prepare a loaf tin by lining with baking paper.
  • Place a non-stick frying pan over high heat and saute the onion and garlic in the tallow, until the onion is turning translucent. Set aside to cool slightly.
    1 tablespoon tallow, 1 small onion, 2 cloves garlic
  • In a large mixing bowl add the warm onion mixture and all remaining ingredients, except the extra marinara sauce.
    2 pounds ground beef, 2 large eggs, 2 tablespoons oregano, 1 1/2 teaspoon salt, 1/4 teaspoon pepper, 1/3 cup almond flour, 1/3 cup low carb marinara sauce
  • Using clean hands, or wearing disposable gloves, mix the ingredients very well.
  • Press into the base of your prepared loaf tin, ensuring there are no air bubbles, and smooth the top.
  • Bake for 50 minutes.
  • Drain off some of the juices and top the meatloaf with the extra marinara sauce.

  • Bake for another 10 minutes.
  • Leave to sit for 10 minutes to rest, before slicing and serving.
