  • 4 cups of Chicken Stock
  • 1 teaspoon of Xanthan Gum
  • 1 teaspoon of Ginger, ground
  • ¼ teaspoon of Garlic Powder
  • ¼ teaspoon of White Pepper, ground
  • 3 large Eggs
  • 4 tablespoons of Sesame Oil
  • Salt, to taste
  • ¼ cup of Scallions, finely sliced

How to make Keto Egg Drop Soup
  1. Place a large saucepan over medium heat, add the chicken stock, and whisk in xanthan gum, ginger, garlic, and pepper.
  2. Bring to a rolling simmer.
  3. Place the eggs into a mixing bowl and whisk well.
  4. Whisk the chicken stock into a whirlpool and slowly pour in the eggs.
  5. Bring back up to a simmer, then remove from the heat.
  6. Stir through the sesame oil, taste and add salt, if needed.
  7. Ladle into bowls, sprinkle with scallions, and serve.
