  • 1 ½ cups of Almond Flour
  • ⅓ cup of Unsweetened Cocoa Powder
  • 1 teaspoon of Baking Powder
  • ½ cup of Brown Sugar Sweetener
  • ½ cup of Unsalted Butter, softened
  • 2 large Eggs
  • 1 tablespoon of Gelatin Powder
  • 1 teaspoon of Vanilla Extract

How to make Keto Chocolate Cookies
  1. Preheat your oven to 175C/350F.
  2. Sift the almond flour, cocoa powder, and baking powder into a large mixing bowl. Set aside.
  3. Into another mixing bowl, add the brown sweetener and butter. Using a hand mixer, beat for 2-3 minutes until pale and creamy.
  4. Add the eggs one at a time, mixing in between each. Then add the gelatin and vanilla. Mix well.
  5. Add the flour mixture into the butter mixture and fold together with a spatula until all the ingredients are well mixed.
  6. Using a #60 cookie scoop, scoop balls of dough onto a cookie sheet lined with parchment paper.
  7. Press down the balls with a spatula into disc shapes, the thinner you make your discs the crispier the cookies will be.
  8. Bake for 12-15 minutes until the cookies are firm around the edges. They will harden up as they cool.
  9. Leave them to cool on the tray for at least 15 minutes, then enjoy!

      I haven’t tested the recipe using xanthan gum, but I don’t see any reason as to why it wouldn’t work. Please let me know how they go 🙂
