This easy breakfast casserole is a great low-carb, keto option for anyone in a rush, just make it ahead of time and reheat it quickly in the microwave before running out the door.

  • 1 tablespoon of Olive Oil
  • 1 small Onion, diced
  • 1 teaspoon of Paprika, ground
  • 1 pound of Ground Sausage
  • 12 Eggs
  • 1/2 cup of Heavy Cream
  • 1/2 cup of Unsweetened Almond Milk
  • 1 teaspoon of Salt
  • 1 teaspoon of Pepper
  • 10 ounces of Cheddar Cheese, grated

How to make Keto Breakfast Casserole

How to make Keto Sausage Breakfast Casserole
  1. Preheat your oven to 175C/350F.
  2. Place a non-stick frying pan over high heat.
  3. Add the olive oil, onion, and paprika, and saute until the onion starts to turn translucent.
  4. Add the sausage and break up with a spoon. Cook until well browned.
  5. Remove from the heat and set aside.
  6. In a large mixing bowl, crack the eggs and add the cream, almond milk, salt, and pepper.
  7. Whisk until the ingredients are well combined. Add half the cheese, reserving half for the top, and mix well.
  8. Add the browned sausage to the egg mixture, mix well.
  9. Pour the mixture into a 9x13in a casserole dish and sprinkle the remaining cheese over the top.
  10. Place the casserole in the oven and bake for 40-50 minutes, until the egg barely jiggles at all when moved.
  11. Remove from the oven and leave to sit for 5 minutes before cutting into portions.
  12. Serve and enjoy.
