Easy Low Carb Beef Breakfast Casserole

Ingredients for Making Your Low Carb Beef Breakfast Casserole:

  • 1 tablespoon of Olive Oil
  • 1 small Onion, diced
  • 1 teaspoon of Paprika, ground
  • 1 pound of Ground Beef
  • 12 Eggs
  • 1 cup of Heavy Cream
  • 1 teaspoon of Salt
  • 1 teaspoon of Pepper
  • 1 pound of Cheddar Cheese, grated

Instructions for Making Your Low Carb Beef Breakfast Casserole:

  1. Preheat your oven to 175C/350F.
  2. Place a non-stick frying pan over high heat.
  3. Add the olive oil, onion and paprika and saute until the onion starts to turn translucent.
  4. Add the ground beef and break up with a spoon. Cook until well browned.
  5. Remove from the heat and set aside.
  6. In a large mixing bowl, crack the eggs and add the cream, salt and pepper.
  7. Whisk until the ingredients are well combined. Add the grated cheese, reserving 3-4 ounces for the top, and mix well.
  8. Add the browned beef to the egg mixture, mix well.
  9. Pour the mixture into a 9x13in casserole dish and sprinkle the remaining cheese over the top.
  10. Place the casserole in the oven and bake for 40-50 minutes, until the egg barely jiggles at all when moved.
  11. Remove from the oven and leave to sit for 5 minutes before cutting into portions.
  12. Serve and enjoy.
