  • 1 small-medium sized Cauliflower
  • 4 ounces of Salted Butter
  • ⅓ cup of Parmesan, finely grated
  • 3 tablespoons of Dijon Mustard
  • 2 cloves of Garlic, crushed
  • 1 Lemon, zest only
  • ½ teaspoon of Salt
  • ½ teaspoon of Pepper, ground
  • 1 ounce of Fresh Parmesan
  • 1 tablespoon of Parsley, finely chopped

How to make Roasted Whole Cauliflower
  1. Preheat the oven to 190C/375F.
  2. Place your cauliflower into a small baking pan, we used a 9in square.
  3. In a small saucepan, add the remaining ingredients, except the fresh parmesan and parsley, and place over low heat, until melted.
  4. Whisk together.
  5. Brush ⅓ of the butter mixture onto the cauliflower.
  6. Bake for 20 minutes then remove from the oven and baste with another ⅓ of the butter mixture.
  7. Bake for another 15 minutes and baste with the remaining butter mixture.
  8. Cook for another 20-30 minutes, until the core is tender (check by inserting a small knife).
  9. Place on a plate, drizzle over the drippings from the tray, grate the fresh parmesan and sprinkle over the parsley.
  10. Serve immediately.

How To Store Roasted Whole Cauliflower

Leftover Whole Roasted Cauliflower can be stored in the fridge for up to 4 days, it is not suitable for freezing.
