Keto Cheese Pie Ingredients

  • 2 cups of Almond Flour
  • 1 ounce of Unsalted Butter, softened
  • 1 ounce of Cream Cheese, softened
  • 1 tablespoon of Heavy Cream

Filling

  • 7 ounces of Feta Cheese, we like the creamy Danish style
  • 8 ounces of Fresh Ricotta Cheese
  • 5 ounces of Gruyere Cheese, shredded
  • 2 large Eggs
  • ½ cup of Heavy Cream
  • 2 tablespoons of Rosemary, finely chopped
  • 1 tablespoon of Thyme, finely chopped
  • ½ teaspoon of Pepper
  • Salt, to taste

How to Make Keto Cheese Pie

How to make Keto Three Cheese Pie
  1. Preheat oven to 180C/355F.
  2. In a mixing bowl, add the almond flour.
  3. Add the cream cheese and butter and rub into the almond flour until the mixture resembles crumbs.
  4. Add the heavy cream and gently mix together.
  5. Press into the base of a 9.5in quiche dish.
  6. Bake in the oven for 10-12 minutes, until the base is cooked through, but still pale. Set aside while you make the filling.

Filling

  1. Add the feta cheese and ricotta cheese to your food processor and blend on medium speed until combined.
  2. Add the eggs, cream, rosemary, thyme and pepper and blend until smooth.
  3. Add the Gruyere and pulse until just mixed through.
  4. Pour the mixture into the base and smooth out.
  5. Bake for 20-25 minutes, until the filling is set and there is no jiggle when the pie is moved.
  6. Cut into 10 pieces and serve.

  1. I halved the recipe and used a different keto crust recipe as I had some leftover, and my husband and I enjoyed this for dinner with some keto marinara sauce. I baked this in a smaller pie dish so my filling was deeper and took longer to bake but it was worth the wait. Next time I may add some paprika and cayenne pepper to the filling, and perhaps some more herbs too. Sauteed oyster mushrooms would also be lovely, I suspect, or bits of sun-dried tomatoes or roasted/sauteed bell pepppers, just to give it a bit of oomph. The possibilities are endless!
