  • 0.25oz of Gelatin
  • 2 cups of Heavy Cream
  • ¼ cup of Erythritol
  • 2 teaspoons of Vanilla Essence
  • ½ cup of Berries (strawberries, blueberries, raspberries), to serve

  1. Place the water into a small bowl and sprinkle over the gelatin, leave for 5 minutes to soften.
  2. Place a saucepan over medium heat and add the cream, sweetener and vanilla. Bring to a simmer then remove from the heat.
  3. Whisk in the gelatin, until completely dissolved. If your gelatin is not dissolving, place back over the heat and bring to a simmer, but don’t allow the mixture to boil.
  4. Pour the mixture evenly into 4 glasses and refrigerate for 3-4 hours, until set.
  5. Top each panna cotta with a few berries and enjoy!
