- 0.25oz of Gelatin
- 2 cups of Heavy Cream

Instructions
- Place the water into a small bowl and sprinkle over the gelatin, leave for 5 minutes to soften.¼ cup Water, 0.25 oz Gelatin
- Place a saucepan over medium heat and add the cream, sweetener and vanilla. Bring to a simmer then remove from the heat.2 cups Heavy Cream, ¼ cup Erythritol, 2 teaspoons Vanilla Essence
- Whisk in the gelatin, until completely dissolved. If your gelatin is not dissolving, place back over the heat and bring to a simmer, but don’t allow the mixture to boil.
- Pour the mixture evenly into 4 glasses and refrigerate for 3-4 hours, until set.
- Top each panna cotta with a few berries and enjoy!½ cup Berries
