  • ⅔ cup of Almond Flour
  • ⅓ cup of Coconut Flour
  • ⅓ cup of Erythritol
  • 1 teaspoon of Baking Powder
  • 1 teaspoon of Vanilla Essence
  • 4 large Eggs
  • 5 ounces of Sour Cream
  • 2 ounces of Unsalted Butter, melted
  • 1 cup of Blueberries

How to Make Keto Sheet Pan Pancakes

  1. Preheat your oven to 180C/355F. Line the base and up the sides of an 18in x 13in sheet pan.
  2. In a mixing bowl, add the almond flour, coconut, flour, erythritol, baking powder, and vanilla. Mix.
  3. Add the eggs, sour cream, and butter and whisk to a smooth batter.
  4. Pour the batter into your prepared sheet pan and sprinkle over the blueberries.
  5. Bake for 25-35 minutes until the pancake springs back when touched.
  6. Cut into 12 pieces and serve warm (or cold) drizzled with Sugar-Free Maple Syrup.
