This simple Keto Rice Pudding is a sweet and decadent dessert that’s made using cauliflower! It’s delicious, flavored with vanilla and cinnamon.

We think this Low Carb Rice Pudding is best served warm.

Store leftover Keto Rice Pudding in the fridge for up to 3 days. We don’t recommend freezing.

  • 1 cup of Unsweetened Almond Milk
  • 1 cup of Heavy Cream
  • ⅓ cup of Natvia Sweetener
  • 1 teaspoon of Vanilla Essence
  • 12 ounces of Cauliflower Rice, raw
  • 3 Egg Yolks
  • 1 teaspoon of Cinnamon, ground

How to make Keto Rice Pudding
  1. Place a saucepan over medium heat and add the almond milk, cream, sweetener and vanilla. Mix well.
  2. Bring to a simmer and add the cauliflower rice. Simmer uncovered for 10 minutes, then remove from the heat.
  3. Add the egg yolks to a bowl and whisk together. Ladle a small amount of the rice pudding into the yolks while whisking to temper the eggs, whisk in a second ladleful.
  4. Pour the egg mixture into the saucepan and whisk well. Place back over medium heat and simmer while stirring for 5 minutes.
  5. Remove from the heat and sprinkle with cinnamon. Serve warm or cold.

  2. tastes delicious but the pudding never thickened as much as I would have liked, maybe I need to cut the liquid down or add more cauliflower. i know how to cook and was looking for a thicker pudding… maybe another egg yolk? Thank you!

    • Hi William,

      The pudding will thicken up more as it cools, if you want a thicker warm pudding then try adding half the almond milk and see how that goes. You can always add it back in if your pudding gets too thick!

      I think it would work well, it might just need to cook a bit longer as frozen cauliflower can be a bit watery.
