  2. In a mixing bowl, add the almond flour, sukrin gold, and pumpkin spice mix. Mix well.
  3. Add the pumpkin essence, butter and egg. Mix into a sticky dough.
  4. Use a #40/medium cookie scoop (approximately 1 ½ tablespoons) to scoop the dough onto the cookie sheets. Press the dough into a disc shape.
  5. Bake for 20-25 minutes, until the edges are firm.
  6. Leave to cool for 20 minutes before enjoying.
