These Low Carb Pumpkin Spice Cookies are the result of many failed test batches with one big lesson learned – using pumpkin puree results in soft cake-like cookies, no matter how long they are baked for.

Our solution for crunchy cookies is to use pumpkin flavoring (liquid pumpkin spice) instead. All that great pumpkin flavor yet still crumbly, buttery cookies as a result.

  • 7 ounces of Almond Flour
  • 2 ounces of Swerve-Brown
  • 2 teaspoons of Pumpkin Spice Mix
  • 3-5 drops of Liquid Pumpkin Spice
  • 4 ounces of Unsalted Butter, melted
  • 1 large Egg

How to make Keto Pumpkin Spice Cookies
  1. Preheat your oven to 160C/340F. Line 2 cookie sheets with parchment paper and set aside.
  2. In a mixing bowl, add the almond flour, swerve (brown version), and pumpkin spice mix. Mix well.
  3. Add the liquid pumpkin spice, butter and egg. Mix into a sticky dough.
  4. Use a #40/medium cookie scoop (approximately 1 ½ tablespoons) to scoop the dough onto the cookie sheets. Press the dough into a disc shape.
  5. Bake for 20-25 minutes, until the edges are firm.
  6. Leave to cool for 20 minutes before enjoying.
