These keto portobello stuffed mushroom pizzas are easy and ready in 10 minutes, perfect for a quick and healthy low-carb lunch, dinner, or keto snack.

We made our mini pepperoni using a small round cutter on larger slices of pepperoni.

This Pizza Stuffed Mushroom recipe makes two servings. One serve is three mushroom pizzas.

  • 6 Portobello Mushrooms
  • 1 tablespoon of Olive Oil
  • 1 clove of Garlic, crushed
  • ⅓ cup of Marinara Sauce (or store-bought if you don’t care about being low-carb)
  • 1 ½ cups of Mozzarella Cheese, shredded
  • 2 ounces of Pepperoni
  • 3 teaspoons of Italian Herb Mix

How to make Pizza Stuffed with Mushrooms
  1. Preheat oven to 220C/430F. Line a cookie sheet with parchment paper and set it aside.
  2. Gently remove the stalks from the mushrooms and discard them.
  3. Mix the oil and garlic, and brush onto both sides of the mushroom. Place the mushrooms gill side up on the prepared cookie sheet.
  4. Evenly spread the marinara sauce over each mushroom, top with the cheese and pepperoni, and sprinkle over the herb mix.
  5. Bake for 7-10 minutes until the cheese has melted and is starting to brown.
  6. Serve immediately.
