Keto Cheddar Cauliflower Mash Ingredients
- 1.8 pound (1 head) of Cauliflower, cut into florets
- 3 ounces of Butter
- 3.5 ounces (1 cup) of Cheddar Cheese, shredded
- 1 teaspoon of Salt
- ½ teaspoon Pepper
How to make Keto Cheddar Cauliflower Mash

- Preheat oven to 200C/390F.
- Boil a saucepan two-thirds full of water.
- Add the cauliflower and cook for 10 minutes, or until the cauliflower is tender.
- Drain the cauliflower well then return to the saucepan.
- Add the butter. Blend the cauliflower into a puree using a stick blender.
- Add half the cheese and blend until melted and mixed through.
- Add the salt and pepper and blend again.
- Spoon into a casserole dish and top with the remaining cheddar.
- Bake for 15-20 minutes, until the cheese, is melted and browned.
- Serve and enjoy.
