Keto Cheddar Cauliflower Mash Ingredients

  • 1.8 pound (1 head) of Cauliflower, cut into florets
  • 3 ounces of Butter
  • 3.5 ounces (1 cup) of Cheddar Cheese, shredded
  • 1 teaspoon of Salt
  • ½ teaspoon Pepper

How to make Keto Cheddar Cauliflower Mash
  1. Preheat oven to 200C/390F.
  2. Boil a saucepan two-thirds full of water.
  3. Add the cauliflower and cook for 10 minutes, or until the cauliflower is tender.
  4. Drain the cauliflower well then return to the saucepan.
  5. Add the butter. Blend the cauliflower into a puree using a stick blender.
  6. Add half the cheese and blend until melted and mixed through.
  7. Add the salt and pepper and blend again.
  8. Spoon into a casserole dish and top with the remaining cheddar.
  9. Bake for 15-20 minutes, until the cheese, is melted and browned.
  10. Serve and enjoy.
