Once your Keto Caramel Sauce is off the heat and cooling down, avoid “playing” with it, as stirring will add air and cause it to crystallize quickly. You can fix the crystalized sauce by reheating it over low heat until the crystals have melted.

Can you use the swerve sugar in place of the Xylitol?
hello Christina, no sorry Swerve won’t work, we tried that and various other sweeteners.
Hi do you think this would work with monkfruit sweetener instead of xylitol?
Hi Shelly we tried various sweeteners and only Xylitol worked, we, however, did not try Monk Fruit so we don’t know. if you try it let us know how it turns out.
Absolutely fabulous! I honestly worried that this would be another Keto ‘it’s not so bad, but it’s not great’ recipes, but it is totally delicious. It’s my birthday on Monday and I’ve made this as a drizzle for my birthday cheesecake and I am over the moon. Thank you so much.
Happy Birthday Tamara! I’m so glad you enjoyed the recipe 🙂
