Easy to make keto beef short ribs made in the instant pot. Tender and delicious, the meat falls off the bone.
ThisInstant Pot beef short ribs recipe makes eight servings. One serving is one rib with sauce and has 0.5g net carbs.
You can make this recipe in a pressure cooker at the same time as the Instant Pot, or you can use a slow cooker where you’ll slow cook for between 4 and 6 hours.
Ingredients
- 8 Beef Short Ribs, bone-in
- 3 tablespoons of Olive Oil
- 1 small Onion, diced
- 4 cloves of Garlic, sliced
- 1 teaspoon of Dried Thyme
- 1 teaspoon of Salt
- 1 cup of Beef Stock
How to Make Instant Pot Beef Short Ribs
- Place one tablespoon of the oil into a large frying pan and place over high heat.
- Brown the short ribs on all sides and set aside.
- Set your instant pot to saute and add the remaining oil, followed by the onion, garlic, thyme, and salt. Saute for about 5 minutes until the onions have softened.
- Add the beef stock and mix well.
- Add the brown short ribs to the instant pot and put on the lid.
- Set to high pressure for 45 minutes for large ribs and 30 minutes for smaller ribs.
- Use the natural release method and remove the lid.
- Remove the ribs and place them into a lined roasting tray.
- Pour half the remaining liquid into a small saucepan and place over high heat to reduce. Boil until reduced by half, then blend with an immersion blender until smooth.
- Broil the ribs for 5 minutes or until crispy.
- Serve the ribs drizzled with sauce and with a side of Keto Coleslaw.
