  • ¼ cup of Erythritol
  • 2 tablespoons of Bacon, cooked and finely chopped
  • 2 large Eggs
  • ¼ cup of Sour Cream
  • 2 tablespoons of Sugar-Free Maple Syrup
  • 1 teaspoon of Vanilla Essence
  • 2 tablespoons of Coconut Flour
  • ½ cup of Almond Flour
  • ½ teaspoon of Baking Powder
  • SugarFree Frosting Ingredients
  • 5 ounces of Unsalted Butter, softened
  • 4 ounces of Surkin Melis (icing sweetener)
  • 1 tablespoon of Sugar-Free Maple Syrup
  • 1 tablespoon of Bacon, cooked and finely chopped

How to Make Low Carb Maple Bacon Cupcakes

  1. Preheat your oven to 160C/320F.
  2. In a large bowl add the softened butter, sweetener, and bacon. Mix well.
  3. Add the remaining cake ingredients and mix well, until fully combined.
  4. Line a mini muffin tin with cupcake papers and fill each 3 quarters full.
  5. Bake for 15-18 minutes, until the cakes spring back when touched. Set aside to cool.
  6. Sugar-Free Frosting
  7. In a large mixing bowl, add the butter, icing mixture and maple syrup and whip with a hand mixer. Starting on low speed to prevent sprinkling icing mixture around the room. Whip until light and fluffy.
  8. Spoon the frosting in a piping bag with a star nozzle and pipe onto the cupcakes.
  9. Top each cupcake with a sprinkle of the finely chopped bacon.
  10. Serve immediately or store in an airtight container in the fridge.
