Traditionally Latkes are a potato pancakes recipe but we’ve made them Keto-Friendly by using Cauliflower in place of potatoes.

We’ve kept these Cauliflower Latke Pancakes simple and very easy to throw together, much like our other cauliflower recipes.
Recipe makes 6 small cauliflower pancakes, which is equal to 3 servings and gives 2 pancakes per serve – topped with 1 tablespoon of Sour Cream. They’re also great topped with Aioli. 1 serving has 3g net carbs.

Hi Angela,
We use raw cauliflower, the frozen cauliflower rice tends to be a bit too wet.
