Traditionally Latkes are a potato pancake, we’ve made them Keto-Friendly by using Cauliflower to make our Low Carb Latkes.
We’ve kept these Cauliflower Latke Pancakes simple and very easy to throw together, much like our other cauliflower recipes.
Recipe makes 6 small cauliflower pancakes, which is equal to 3 servings and gives 2 pancakes per serve – topped with 1 tablespoon of Sour Cream. They’re also great topped with Aioli. 1 serving has 3g net carbs.
Leftover Keto Latkes can be stored in the fridge for up to 4 days or frozen up to 3 months. Reheat in the microwave or in a frying pan over medium heat, until warmed through.

Thank you for sharing this recipe. Delicious, and so nice not to feel deprived as the rest of my family chows down on their traditional latkes!
I am hoping to make these this next week. Do you use raw cauliflower? Or frozen? Thanks!! 🙂
Hi Angela,
We use raw cauliflower, the frozen cauliflower rice tends to be a bit too wet.
