Traditionally Latkes are a potato pancake, we’ve made them Keto-Friendly by using Cauliflower to make our Low Carb Latkes. 

We’ve kept these Cauliflower Latke Pancakes simple and very easy to throw together, much like our other cauliflower recipes.

Recipe makes 6 small cauliflower pancakes, which is equal to 3 servings and gives 2 pancakes per serve – topped with 1 tablespoon of Sour Cream. They’re also great topped with Aioli. 1 serving has 3g net carbs.

Leftover Keto Latkes can be stored in the fridge for up to 4 days or frozen up to 3 months. Reheat in the microwave or in a frying pan over medium heat, until warmed through.

Keto Cauliflower Latkes Ingredients

  • ½ head of Cauliflower
  • ½ cup of Scallions, thinly sliced
  • 1 tablespoon of Golden Flaxseed Meal
  • 2 Eggs
  • 1 ½ teaspoon of Salt
  • ½ teaspoon of Pepper
  • 3 tablespoons of Butter
  • 3 tablespoons of Sour Cream, to serve

How to Make Keto Cauliflower Latkes

How to make Keto Cauliflower Latkes
  1. Grate the cauliflower and place into a mixing bowl, add 1 teaspoon of salt and mix well. Set aside for 20 minutes.
  2. Spoon the cauliflower into a piece of muslin cloth, or into a clean cotton cloth. Squeeze out as much liquid as you can.
  3. Place the squeezed cauliflower into a clean mixing bowl and add the remaining ingredients, except the butter and sour cream. Mix well.
  4. In a large non-stick frying pan, add the butter and heat over medium to high heat.
  5. When hot, add spoonfuls of the cauliflower mix and flatten out into small pancakes. Fry on each side for 2-3 minutes until golden brown and cooked through.
  6. Serve with a tablespoon of Sour Cream.
