This Sugar-free Vanilla Mousse dessert is not overly sweet on purpose, keeping with the subtle sweetness of the original recipe. If you have a sweet tooth, you can increase the sweetener to ⅓ of a cup.

  • 1 ½ cups of Coconut Cream
  • 1 tablespoon + 1 teaspoon of Gelatine Powder
  • ¼ cup of Erythritol
  • 1 teaspoon of Vanilla Essence
  • 1 teaspoon of Coconut Essence
  • 1 ½ cups of Heavy Cream
  • 4 Keto Coconut Wafers, optional
  • 1 tablespoon of Unsweetened Coconut, shredded and toasted
  • ½ cup of Keto Whipped Cream, optional

How to make Keto Vanilla Mousse
  1. Place the coconut cream, gelatine, erythritol, vanilla, and coconut essence in a small saucepan over medium heat.
  2. Bring to a simmer, ensure the gelatine has dissolved, then remove from the heat. Leave to cool until almost at room temperature.
  3. Place the cream in a large bowl, and using a hand mixer, whisk to form soft peaks.
  4. Add a little of the coconut mixture at a time and whisk through. The mixture will be thick and pourable.
  5. Pour into six serving glasses or ramekins. Cover and set in the fridge for 3 hours.
  6. Serve garnished with a Keto Coconut Wafer and Whipped Cream.
