Make it once, portion it out, freeze it, and you’ve got meal prep sorted for weeks.
I cook this regularly in the van and at home. A 6.5-pound grass-fed chuck from the butcher, a stick of butter, salt, and a slow cooker running overnight — that’s it. The fat content makes it ideal for keto macros, and because it’s almost zero carbs, it works equally well for strict carnivore.

Ingredients & Substitutes

Note: Only five ingredients are required for this chuck roast. I added the rest for flavor to suit my personal taste. If making this chuck roast as a base for various meals, you may want to leave the optional ingredients out and flavor to suit your dish later when using it. Many people on carnivore diets do not use herbs and spices other than salt and occasionally pepper; some do, but it depends on how strict you are with it.
- 6.5 pounds of beef chuck roast (I buy grass-fed)
- 500g of beef bone broth (beef stock will also work)
- 250g grass-fed salted butter
- 2 tablespoons of salt
- 2 tablespoons of ground black pepper
- 2 tablespoons of thyme (optional)
- 2 tablespoons of rosemary (optional)
- 2 tablespoons of garlic powder (optional)
- 2 tablespoons of smoked paprika (optional)
- For those who like a bit of heat add 2 tablespoons (or more) of chili flakes (optional)
How To Make Keto Carnivore Chuck Roast For Meal Prep

- Mix. Soften (half melt) the butter and combine all of the dry ingredients apart from the chuck and bone broth and mix into a paste
- Coat. Thoroughly coat your chuck beef with the butter paste
- Seal and caramelize. Brown the chuck in a frying pan over high heat. We’re not cooking the chuck through just searing the outside. I like to sear it until the beef is dark brown. A very hot pan should do this quickly.
- Transfer. Once seared, transfer the chuck to the slow cooker along with all the burnt bits and melted butter in the pan (I like the flavor it gives), and cover with the bone broth.
- Cook. You can cook it on high for 8 hours or until it just falls apart; the sinew should be like jelly. However, I like to cook mine on low heat for at least 12 hours up to 18 hours.
- Serve and portion. Once cooked, remove the meat from the slow cooker and pull it apart, serve or portion it out in containers, spoon the liquid over each portion evenly, and freeze.

Chuck steak, beef cheeks, brisket, silverside, and osso buco (beef shank) are all excellent cuts of beef for slow cooking. Chuck is usually the most affordable.
You can use ghee (clarified butter), lard, tallow, and dripping, which are all carnivore-friendly. If you’re not purely carnivore, you can use olive oil and coconut oil.
You can if you are not purely on a carnivore diet but are doing keto instead. Add onion, broccoli, cauliflower, celery, squash, zucchini, and almost any other keto-friendly vegetable you desire.
The carnivore diet is not always keto-friendly. If you use lean cuts of meat with no added fats, the carnivore diet will have too much protein and not enough fat. But when cooked with high-fat cuts of meat with adequate fat or fat added, the carnivore diet is keto-friendly. The key is to count your macronutrients.
Yes — a crock pot is just a brand name for a slow cooker. Any crock pot works perfectly for this recipe. If your crock pot has a low and high setting, use low for 12–18 hours for the best result, or high for 8 hours if you’re short on time.
