Low Carb Lemon Dressing

  • Place the lemon juice, mustard, salt, pepper and erythritol in a blender and mix on high speed for 3 minutes.
  • Drop the speed to medium and slowly add the olive oil in a steady stream.
  • Continue blending for 2 minutes, then taste and adjust the seasoning. Set aside.

Fried Halloumi

  • Slice the halloumi into 7mm/0.25in slices.

  • Heat the oil in a frying pan over medium heat.
  • Ensure the oil is nice and hot before adding the halloumi.
  • Fry the halloumi for 2-3 minutes, or until nice and brown before flipping over for another 2-3 minutes.
  • Remove from the pan and drizzle with the lemon dressing. Enjoy.
