Marinated bocconcini mozzarella balls are great to throw together to impress at your next game-day party, family gathering, or potluck. Or add it to your favorite salad, melt atop your keto pizza, or eat it straight from the jar.

Be aware that good-quality olive oils will solidify when chilled. You can combat this by leaving your marinated cheese at room temperature for at least 30 minutes before digging in.

The recipe is super adaptable, and the flavor combinations for your marinade are almost endless. Why not try;

  • Rosemary, sage, and garlic
  • Oregano, basil, and lemon
  • Garlic and chili

We’ve made a few changes in calculating the nutritional information, as a fair bit of the oil will be left in the jar once the cheese is demolished. You can saute your next steak with the remaining flavorsome oil or use it in your favorite salad dressing.

This marinated mozzarella recipe makes ten servings. The serving size will depend on what size of bocconcini or mozzarella pearls you use.

The cheese can be stored in the fridge for up to 2 weeks, or when it reaches the use-by date – ensure it is all submerged in the oil.

  • 14 ounces of Cherry Bocconcini or Mozzarella Pearls
  • 1 tablespoon of Fresh Thyme, roughly torn
  • 2 teaspoons of Whole Peppercorns
  • 1-2 large Red Chili, thinly sliced
  • 3 cloves of Garlic, thinly sliced
  • 1 teaspoon of Salt
  • ½-1 cup of Olive Oil

  1. In a medium to a large glass jar, add half the bocconcini and top with half of the thyme, peppercorns, chili, and garlic.
  2. Add the salt and top with the remaining bocconcini, thyme, peppercorns, chili, and garlic.
  3. Pour over the oil until all the ingredients are covered.
  4. Place the lid on the jar and give it a light shake to mix the ingredients.
  5. Store in the fridge for at least 2 hours to infuse before enjoying.
