Dairy Free Low Carb Coconut Blondies

When you are in the mood for a soft, fluffy cake our Dairy Free Low Carb Coconut Blondies are just perfect. They are also nut-free and ideal for those with dietary restrictions.

These Blondies are best made on a warm day to keep the coconut oil and butter soft enough to mix well. Be sure to use room temperature eggs, or the mixture will firm up as soon as they are added.

If you love all things blondie and brownie, why not try one of our other recipes:

This recipe makes 16 serves. Cut your blondies into four along each side of the tin.

Our blondies are best stored in the fridge, however, the coconut oil will cause them to harden.

You can microwave the low-carb coconut blondies for 10-20 seconds to help them soften up.
