These Lemon Butter Fish Parcels are super easy to make. They are zesty, buttery and delicious, perfect for a quick midweek dinner and ideal for low carb keto diets.
Cut 4x 10in square of aluminum foil. Line each with a small square of parchment paper.
Place the pieces of fish on the parchment paper, top each with 1 tablespoon of Lemon Chive butter, 2 slices of lemon and a sprinkling of salt and pepper.
Bring 2 ends of the foil together and fold together. Fold in the sides to form a parcel around the fish.
Bake for 10-15 minutes, depending on the thickness of your fish fillets.
Allow to sit for 2 minutes before gently unfolding the parcels, beware of the hot steam.
Sprinkle with chives and served with a side of Fall Green Bean Salad.
