These Keto Buffalo Chicken Sliders are delicious mini burgers for your next cookout, or game day feast. The spicy, buttery chicken, topped with crunchy, creamy coleslaw is just a great combination!
Set your Instant Pot to saute. Once heated add the oil and brown the chicken thighs in batches, and season with salt and pepper.
Once the chicken is browned, cancel the saute function and add the chicken stock. Gently scrape any crispy bits off the bottom.
Add all the chicken back in and sprinkle over the ranch mix.
Put the lid on your Instant Pot and set on high pressure for 10 minutes. Use the quick-release method before removing the lid.
Add the chicken to a bowl and shred with 2 forks, then add the hot sauce and butter. Mix well.
Slice the Keto dinner rolls in half, to the bottom bun; add the shredded buffalo chicken, some Keto Coleslaw, crumble over blue cheese and top with the other half of the bun.
