Keto Ham & Mayonnaise Scrolls - Cheesy, Low Carb Bun Recipe

  • In a small bowl, add the yeast, inulin and warm water. Stir and set in a warm place to activate.
  • Place the mozzarella and butter into a small saucepan and place over low heat, stirring often, until completely melted.
  • While the cheese is melting, add the almond flour, xanthan gum and salt into a large bowl. Mix well.
  • Add the activated yeast and eggs into the almond flour, mix lightly, then add the melted cheese.
  • Mix with a spoon until cool enough to handle, knead with hands until a smooth dough is formed.
  • Roll the dough between 2 sheets of parchment paper into a rectangle shape 5mm/0.25in thick.
  • Spread ¾’s of the dough with the mayonnaise, top with the ham, and half the cheddar.
  • Roll the dough from one of the long sides to the other, gently pressing together.
  • Gently cut into 12 pieces using a serrated knife, set onto a lined cookie sheet and leave in a warm place for 20 minutes.
  • Preheat your oven to 175C/390F.
  • Sprinkle the scrolls with the remaining cheddar. Bake for 20-25 minutes until golden brown.
  • Leave to cool for 10 minutes before enjoying.
