Keto Ham & Mayonnaise Scrolls - Cheesy, Low Carb Bun Recipe
Our Keto Ham & Mayonnaise Scrolls are a delicious savory baked treat. They make a great lunch or cheesy snack, why not heat one up for breakfast too!

In a small bowl, add the yeast, inulin and warm water. Stir and set in a warm place to activate.
Place the mozzarella and butter into a small saucepan and place over low heat, stirring often, until completely melted.
While the cheese is melting, add the almond flour, xanthan gum and salt into a large bowl. Mix well.
Add the activated yeast and eggs into the almond flour, mix lightly, then add the melted cheese.
Mix with a spoon until cool enough to handle, knead with hands until a smooth dough is formed.
Roll the dough between 2 sheets of parchment paper into a rectangle shape 5mm/0.25in thick.
Spread ¾’s of the dough with the mayonnaise, top with the ham, and half the cheddar.
Roll the dough from one of the long sides to the other, gently pressing together.
Gently cut into 12 pieces using a serrated knife, set onto a lined cookie sheet and leave in a warm place for 20 minutes.
Preheat your oven to 175C/390F.
Sprinkle the scrolls with the remaining cheddar. Bake for 20-25 minutes until golden brown.
Leave to cool for 10 minutes before enjoying.
