Ingredients
Low Carb Lemon Dressing
2tablespoonsLemon Juice
1teaspoonDijon Mustard
1pinchSalt
1pinchPepperwhite
1pinchErythritol
1/4cupolive oil
Fried Halloumi
8ozHalloumi Cheese
1tablespoonolive oil
Instructions
Low Carb Lemon Dressing
Place the lemon juice, mustard, salt, pepper and erythritol in a blender and mix on high speed for 3 minutes.
Drop the speed to medium and slowly add the olive oil in a steady stream.
Continue blending for 2 minutes, then taste and adjust the seasoning. Set aside.
Fried Halloumi
Slice the halloumi into 7mm/0.25in slices.
Heat the oil in a frying pan over medium heat.
Ensure the oil is nice and hot before adding the halloumi.
Fry the halloumi for 2-3 minutes, or until nice and brown before flipping over for another 2-3 minutes.
Remove from the pan and drizzle with the lemon dressing. Enjoy.
