Instructions
Preheat your oven to 175C/350F.
Sift the almond flour, cocoa powder, and baking powder into a large mixing bowl. Set aside.
Into another mixing bowl, add the brown sweetener and butter. Using a hand mixer, beat for 2-3 minutes until pale and creamy.
Add the eggs one at a time, mixing in between each. Then add the gelatin and vanilla. Mix well.
Add the flour mixture into the butter mixture and fold together with a spatula until all the ingredients are well mixed.
Using a #60 cookie scoop, scoop balls of dough onto a cookie sheet lined with parchment paper.
Press down the balls with a spatula into disc shapes, the thinner you make your discs the crispier the cookies will be.
Bake for 12-15 minutes until the cookies are firm around the edges. They will harden up as they cool.
Leave them to cool on the tray for at least 15 minutes, then enjoy!
