Place 1 tablespoon of the oil into a large frying pan and place over high heat.

Brown the short ribs on all sides and set aside.

Set your instant pot to saute and add the remaining oil, followed by the onion, garlic, thyme, and salt. Saute for about 5 minutes until the onions have softened.

Add the beef stock and mix well.

Add the browned short ribs to the instant pot and put on the lid.
Set to high pressure for 45 minutes for large ribs, 30 minutes for smaller ribs.
Use the natural release method and remove the lid.
Remove the ribs and place them into a lined roasting tray.
Pour half the remaining liquid into a small saucepan and place over high heat to reduce. Boil until reduced by half, then blend with an immersion blender until smooth.
Broil the ribs for 5 minutes, or until crispy.
Serve the ribs drizzled with sauce and with a side of Keto Coleslaw.
