Instructions
Preheat your oven to 160C/340F. Line 2 cookie sheets with parchment paper and set aside.
In a mixing bowl, add the almond flour, sukrin gold and pumpkin spice mix. Mix well.
Add the pumpkin essence, butter and egg. Mix into a sticky dough.
Use a #40/medium cookie scoop (approximately 1 ½ tablespoonto scoop the dough onto the cookie sheets. Press the dough into a disc shape.
Bake for 20-25 minutes, until the edges are firm.
Leave to cool for 20 minutes before enjoying.
