Instructions
Place the coconut cream, gelatin, erythritol, vanilla, and coconut essence in a small saucepan over medium heat.
Bring to a simmer, ensure the gelatine has dissolved, then remove from the heat. Leave to cool until almost at room temperature.
Place the cream in a large bowl and using a hand mixer, whisk to firm soft peaks.
Add a little of the coconut mixture at a time and whisk through. The mixture will be thick and pourable.
Pour into 4 serving glasses or ramekins. Cover and set in the fridge for 3 hours.
Serve garnished with a Keto Coconut Wafer and Whipped Cream.
