Place the yeast, inulin and warm water in a bowl, leave in a warm place to activate.
Place the cheese and butter into a small saucepan and place over low heat. Heat until completely melted.
In your stand mixer, add the almond flour, xanthan gum and salt. Mix with the paddle attachment.
Add the yeast mixture and melted cheese to the stand mixer. Mix on medium speed and add the eggs, one at a time.
Mix until a smooth dough has formed.
Split the dough into 12 balls. Roll each ball into a long sausage shape and wrap around each of the hot dogs, place onto a lined cookie sheet. Repeat until all the hot dogs are wrapped.
Roll each of the hot dogs in the toppings of your choice.
Bake for 20-25 minutes, until the dough is puffed up and golden brown.
Serve hot with American Mustard and Sugar-Free Ketchup.
