Instructions
Preheat your oven to 190C/375F. Line a baking sheet with parchment paper and set aside.
In a flat bottomed baking pan, add the almond flour, parmesan, ranch mix. Mix together and set aside.
Use a meat mallet to pound the chicken thighs until they are of even thickness.
Brush each chicken thigh with mayonnaise and bread with the almond flour mixture.
Place on the baking sheet and bake for 25-30 minutes until golden brown and has reached an internal temperature of 73C/165F.
Serve your chicken with your favorite sides, we recommend Mashed Cauliflower or Garlic Green Beans
